Unbleached Flour
Type of flour that has not undergone the chemical bleaching process typically used to whiten and age flour. Unbleached flour naturally ages over time, which helps improve its baking properties. It also retains more of its natural nutrients and can have a richer flavor and texture. Because it’s free from chemical additives used in bleaching, unbleached flour is often preferred by those seeking a more natural option.

Honey & Maple Syrup
We use local pure honey and pure maple syrup instead of sugar. Honey contains various vitamins, minerals, and antioxidants and its antioxidant properties can contribute to health benefits, such as reducing inflammation and aiding digestion.
While still a form of sugar, pure maple syrup contains trace amounts of vitamins and minerals, such as manganese, zinc, and calcium. It also has antioxidants, which may offer some health benefits.
While it's not always possible to get away from using some sugar in some of our sweet boules, we swap it out with honey and maple wherever possible.

Seeds and Nuts
Our seeded breads are full of nutritional seeds that offer numerous health benefits.
Sunflower seeds- Vitamin E, high in protein and rich in healthy fats, as well as antioxidants. They also have natural antimicrobial, antibacterial, and antiviral properties.
Pumpkin seeds- Magnesium for heart health and bone health. Rich in antioxidants, immune boosting vitamins and minerals. Eating pumpkin seeds a few hours before bed may help promote a restful night's sleep.
Chia seeds- great source of fiber, which can help with heart health, cholesterol levels, and intestinal health. Anti-inflammatory omega-3 fatty acids for skin conditions like acne, eczema, and psoriasis. Contain calcium, magnesium, iron, and B vitamins to support bone health. Antioxidants.
Black Sesame- fiber and omega-3 fatty acids to protect the digestive system. Calcium, magnesium, and phosphorus for bone health. Zinc for skin and hair health. Magnesium and vitamin B6 to support brain health and improve cognitive function. Antioxidant. Protein and B vitamins for energy level maintenance.

Cheese
We only use the highest quality cheeses for our breads. We never us pre-shredded/pre-cut cheese that contain preservatives. Manufacturers often coat pre-shredded cheese with additives like potato starch, cellulose, and natamycin to prevent clumping and mold growth.

Herbs & Sauces
We use fresh herbs grown in our garden whenever the seasons allow, which here in Arizona is almost year round.

There are many health benefits derived from Rosemary; reduce anxiety and stress, rich source of anti-oxidants and anti-inflammatory compounds, increase of blood circulation, digestive health and Rosemary has been used for centuries as a memory aid.
The pesto used in our pesto bread is made fresh in house as is the tomato and basil sauce used in the tomato basil bread.
Our pizza focaccia is made with a delectable pizza sauce made in house using San Marzano tomatoes and fresh basil. No jarred sauce can be found here at The Red Oven.

It is the only kind of olive oil used here at The Red Oven.
Not all olive oils are made the same. High-quality EVOO is usually packaged in dark glass bottles or tins to protect it from light, which can cause oxidation and spoilage. True EVOO will have labels that specify "extra virgin" and include certification from organizations like the International Olive Oil Council (IOOC) or other recognized bodies.

Fruits
Fresh fruits in season are used in all our breads and focaccia's. We even have our own fig tree, and citrus trees.
The depth of flavor found in the zest of a freshly picked lemon or orange cannot compare to store bought citrus that has been sitting for a while. This is one of the reasons some of our breads are not available year round and we offer seasonal selections.

Spices & Chocolate
We use Saigon cinnamon in all our breads and for some of our recipes we also smoke it to really enhance the flavor.
